Acai chia bombs

These little bowls of goodness were also discovered in Thailand. This time on the beautiful island of Koh Phi Phi. The original recipe I tried was made by blending frozen fruit with Acai. This was my go to breakfast on the island. But once home I decided to combine it with another one of my favourite recipes, Chia pudding and there was born my very popular Acai Chia Bombs.

Ingredients.

  • 4 Tbsp chia seeds

  • 1 Can coconut milk (for a lighter version use the same amount of coconut milk from a carton

  • 1 Tbsp Acai powder

  • 1 Tsp vanilla extract

  • 1/2 a green banana

  • 1/4 mango

  • 1 Tbsp desiccated coconut

    Method

    Mix the Chia seeds, coconut milk, acai powder and vanilla extract in a bowl and divide into 4 small pots with lids.

    Allow to set in the fridge for around 30 minutes

    Top with sliced banana, cubed mango and a sprinkle of desiccated coconut
