egg loaded protein boats
These little boats of goodness are packed with protein and although they are super light they are incredibly filling. The perfect way to break your fast.
Ingredients:
2 boiled eggs
1 small red onion
1/2 tsp paprika
1 tsp Dijon mustard
1/2 tsp onion powder
salt & pepper
2 Tbsp Cottage cheese
1/2 a cucumber
Method
Hard boil the eggs and plunge into iced water.
Peal the eggs & quarter the onion
Place all of the ingredients except the cucumber on a chopping boad and chop to combine
Cut the cucumber in half lengthways and scoop out the centre
Load up the egg mixture in your boats and enjoy!
